The first stalks of fresh, local rhubarb have started to appear in my area and I simply could wait to start concocting delicious yummies.

Traditionally I have always opted to combine this tart vegetable (yes rhubard is a vegetable) with fresh berries (as I did a couple of weeks ago during ‘Strawberry Madness‘).

In looking for more rhubarb inspiration however I stumbled across a couple of recipes that coupled this flavour with orange. I was skeptical but decided to be adventurous. I’m really glad I did!

Stewed Rhubarb with Orange

3 1/2 to 4 cups chopped rhubarb stalks
1/3 cup coconut sugar
Zest and Juice from 1 orange
1/2 teaspoon cinnamon
1/2 teaspoon vanilla

Combine all ingredients in a saucepan and bring to a boil. Simmer on low until the rhubarb begins to soften but before it looses it’s shape (about 5-10 minutes).

Tangy Yums!

I am getting married in 6 weeks and have decided to be ‘good’ for a while so that I can still fit into my wedding dress! As such, I opted to serve this with pork chops instead of making a pie or some other more decadent goodie.

I fear that this new recipe I saw just this morning might weaken my resolve however.I might have to try making a grain and sugar free version – stay tuned!
